Banana Chocolate Muffins

Gluten-Free Banana-Chocolate Muffins:

EASY as 1-2-3!

Ingredients:

  1. One cup liquid (water, milk, dairy alternative)
  2. Two tbsp fat (melted butter, coconut oil, or other oil)
  3. Three eggs (for vegan substitute 3 flax eggs: 3 tbsp ground flax/9 tbsp boiling water)
  4. Package of Whisked Gluten-Free Muffin Mix (500 grams)
  5. One large ripe banana
  6. ¾ cup chocolate chips (make sure they are vegan or dairy-free if you adhere to a specific diet or you can buy the ones we use at the bakery here)

Directions:

  1. Pre-heat oven to 350 F 175C.
  2. Line 12 muffin cups with liners.
  3. In a bowl whisk water (liquid), coconut oil (fat) and eggs.
  4. Add muffin mix and whisk until smooth.
  5. Mash your banana a bit with a fork and add to the muffin batter, fold in the chocolate chips with a spoon or spatula.
  6. Fill muffin cups with an ice-cream scoop of measuring cup about 2/3 full.
  7. Bake 20-25 minutes until tops are golden brown and toothpick comes out clean
